Aussie Coeliac’s, Recipe & Update
I thought I should send a bit of an update on how I am going with Coeliac’s.
I have finally after 2 and a half weeks worked out the source of contamination. Or at least worked it down to two things. I think it is either some Arnott’s Rice cookies I was eating or some tinned strawberries. I think it is most likely the cookies, which is a shame because they were the first biscuits I have had since being diagnosed that actually tasted like real cookies and not diet cookies! I am going to trial the strawberries again soon to make sure it is not them as I would really like to be making fruit frappes for breakfast again and fresh strawberries are too expensive at the moment.
My Yummy Fruit Frappe Recipe
4 Ice Cubes
1 Banana
1 Slice of Watermelon
8-10 Fresh Strawberries or Equivalent in Tinned. (Fresh is nicer!)
Blend in blender and enjoy!
It is soo refreshing in the mornings and is a great way of getting your daily intake of fruit, particularly for people like me who are not that into fruit! Mind you, I have been eating dried apricots and almonds every day at work for morning and afternoon tea so I am at least having lots of goodies there. I am trying my hardest to bring my vitamin levels back to normal so that my energy returns to what it should be.
I have been off the contamination cookies for about a week now and am getting there. I had a bit of a setback with a virus making me tired again! I can’t wait however to return to normal again! Who knows I may actually be able to keep up with things around the house and still have time for all the other stuff I want to do. Would be nice!
I am still making my bread, fruit loaf for breakfasts and regular bread for when we have eggs or something for dinner which we do on occasion when we need a quick and easy meal, or when Dean and the kids have something I can’t have.
I really must check out the Deli my fellow local Coeliac friend told me about. Will be interesting to see what they have there.
I have started an email support group, (A yahoogroup) for Aussie’s with Coeliac’s. I am already part of a yahoogroup but they are not overly supportive, so I thought I would start my own. I wanted a group that was good for sharing info as well as supportive, not just the former. Unfortunately I couldn’t find any others, so decided to start my own.
